Which restaurants in North Jersey define New Jersey dining, according to Open Table?

Best to begin by defining what that even means. 

According to Open Table, the online restaurant-reservation company, restaurants that define an area's dining are restaurants that are "so closely woven into the fabric of a city they become part of its heartbeat, making it almost impossible to imagine the place without them." Open Table has another term for them: The Greats.

It named 22 restaurants in the Garden State that define dining here, dividing them into regions: North, Central and South Jersey. (Guess we know what side Open Table is on in that age-old debate on whether Central Jersey exists.) 

And regarding dining in NJ, the company had this to say: "Often overshadowed by the cities that bookend it  — New York City and Philadelphia — the state’s dining scene flies under the radar, but those who pay attention are richly rewarded."

We are rewarded with these "Greats":

1. Saddle River Inn, Saddle River.

2. Fornos, Newark.

3. Hunan Taste, Denville and Montclair.

4. La Isla, Hoboken.

5. Mesob, Montclair.

6. Felina, Ridgewood.

7. Mehndi, Morristown.

8. Restaurant Serenade, Chatham.

9. Jockey Hollow Bar & Kitchen, Morristown.

10. Razza, Jersey City
