What's smokin' at Bill's BBQ in Newfield?

NEWFIELD – Daily split oak and hickory wood, spice rubs, homemade sides and barbecue sauces, the carefully chosen cuts of meat and their oh-so-slow cooking methods – all come together for a lip-smacking good time at Bill's BBQ in Gloucester County.
The family-run roadside stand, located along the outskirts of Buena and Vineland on Harding Highway in Franklin Township, prepares chicken, ribs, pulled pork and brisket within several large wood burning smokers.
Side dishes on the menu include homemade coleslaw, potato salad, baked beans and colored greens.
Oak and hickory wood is used to obtain a deep smoke ring in the ribs says Hope Urso, daughter of Bill and Hope Millward who own the eatery. "We use those types of wood to get a bold smokey flavor associated with this type of barbecue."
Wood is delivered weekly by a local farmer and cut down to size daily, using a gas powered log splitter.
Owners Bill and Hope Millward opened in 2011 and plan to build a eat-in structure in the future on the property.
